Carson 28 Weeks


How far along: 28 weeks
Best moment this week: Feeling him squirm
Miss Anything: Sleeping on my back. It helps relieve my back pain but I don't stay there long.
Movement: This month I think I felt him turn, or press firmly against my stomach. It was weird but exciting all at once.
Food cravings: My chocolate obsession is slowly subsiding, but I still enjoy the sweets.
Have you started to show yet: I still don't have a mirror so everytime I go out somewhere and see a full length mirror I'm shocked at the size of my belly!
Looking forward to: Finishing up decorations for the nursery.

I'm about to enter the last trimester and it's crazy to think Carson will be here in a few months!! There are days I still wake up and I can't believe I'm actually pregnant. I can't wait to meet the little guy. In other news, Reid got GREAT news on the job front. Still keep us in your prayers as we have decisions to make ahead about what is best for our family.

Happy Birthday To Me!

I have to say that 27 is starting out just fine! While Denver decided to give me a snowstorm, I did not let it damper my mood (and even quite enjoyed the fluffy white). My day started by venturing out into the blizzard-like conditions to go to our second service at Restoration Community Church! I think we found a good fit.

Later in the day, Reid and I took Snyder for some fun in the snow. Snyder loves the snow and he had a blast running around. Reid and I apparently had too much fun also because we found our inner-child and played on the playground.

Our original plan for the day was to go out hiking and end up at Beau Jo's, a well-known Colorado pizza joint. Reid and I have yet to try it so we found my b-day fitting for the first time experience. However, Colorado had other plans so we will postpone this until next weekend. Hopefully we'll add in a job celebration for Reid as he has three interviews this week! Fingers crossed!!
 
We instead made dinner at home which included rib-eye, asparagus and sweet potatoes. Quite tasty if I should say so myself but did not even compare to the delicious cake Reid made for me. He whipped up a sweet potato cake with cream cheese frosting and it was to die for! Happy to eat the leftovers this week.
 
 
Sweet Potato Suprise Cake (from cooks.com)

1 cup vegetable oil
2 cups sugar
4 eggs, separated
1/4 cup hot water
2 1/2 cups cake flour, sifted
1 tbsp baking powder
1/4 tsp salt
1 tsp ground cinnamon
1 tsp nutmeg
1 1/2 cup grated raw sweet potatoes (we mashed ours)
1 cup chopped walnuts
1 tsp vanilla extract

Combine oil, sugar, egg yolks and water and beat on medium speed until combined. Combine dry ingredients and add to the oil mixture, mixing until moistened. Stir in the sweet potatoes, walnuts and vanilla. Beat egg whites untill stiff, but not dry and fold into batter. Spoon batter into 3 greased 9 inch cake pans. Bake at 350 for 25-30 minutes. When finished, immediately invert layers on wire cooling racks and cool for 5 minutes then remove from pans; cool completely.

Whipped Cream Cheese Frosting (allrecipes.com)

1 8oz package cream cheese
1 cup white sugar
1/8 tsp salt
1 tsp vanilla extract
1 1/2 cups heavy whipping cream

Beat whipping cream  until stiff peaks form; set aside. Combine cream cheese, sugar, salt and vanilla, beating until smooth, then fold in whipped cream.

Mountain Adventures and Nursery Decor Updates

Well this is an exciting post to write because I finally made it out hiking without any pains and with good weather :) I'm so glad we went out yesterday and enjoyed the lovely state we chose to live in. We ventured out toward Boulder and hiked in the Eldorado Canyon! This area is best know for it's rock climbing, which we saw plenty of people doing, but we took off on the Eldorado Canyon Trail for a good 5 mile hike.

Today we attended the last of the three churches we wanted to try and decided this was the church for us. So excited to go back to Restoration Community Church! After church we made our way home to cleaning :( Never a fun thing to tackle but we made way on the nursery and have some picture updates for you.

The sign we made for Carson. Frame and letters from Hobby Lobby, I painted the letters and Reid punched the aluminum with mountains and sanded the sides for an additional affect.


We think we have all the final touches figured out and can't wait to go get everything and complete the nursery! In other news, Reid has been having some good luck on the job search hunt. He's got 4 things lined up right now so we are hopeful a job offer will come from one of them. Keep us in your prayers!! Just wanted to leave you with a funny card I found at Target last week...
